Dear Mauri and Mark,
I only cook in Olive Oil and I never reuse the oil. It is costly, but then only have fries very rarely. We heard here years ago that vegetable oil when heated and reheated changes the chemical composition of the oil. And oil can sour. We can taste this when we buy fries from Maccers, KFC and Hungry Jacks. Apparently the oil is only changed on a weekly basis and if you get the end of the week batch the fries have a totally different flavour to those fried in clean oil. It was also suggested to me that only cold pressed oil be used as it has not undergone any heating process.
